A word from the Kitchen:
I've always hated potatoes; they are boring flavor sponges. This is a sentiment I've often had, with obvious exceptions, your au gratin, pierogi, and the like.
The more I think about it, the more I realize I don't hate potatoes, I hate boring preparations of potatoes. Oh cool you put it in an oven for a bit and put butter and sour cream in it, real original.
So I present for your consideration some potato love, 5 potato centric courses; challenging myself and our kitchen to reconsider the potato.
